single origin... that is single plantation
Thought we’d kick off our wee blog with an introduction to Lambubu Bay, Malekula (pronounced ‘mal-e-koola’) - an island in Vanuatu. This is where our cocoa beans are grown. The plantation has a fermentery and wood-fired drying beds where the beans are transformed from a somewhat apple-fragrant, white sappy bean to a dark dry bean with that magical aroma of chocolate.
Single 'origin' chocolate can be a bit like wine from ‘south-eastern Australia’, still sourced from a pretty massive area, country, continent even... you kinda miss the intimate experience of tasting chocolate that is connected to the soil, trees, microclimate and people of one place.
My father-in-law came over to the plantation a while back, and every time he tastes our chocolate, he is ‘taken back to Lambubu Bay and aromas of the fermentery’.
So please enjoy our chocolate like a good wine, made by someone you know, from fruit grown in one place.
